As seasons change in Colorado, Ace is mixing up the menu with 15 new menu items. Two favorites are: Seared Tuna Salad with a yuzu vinaigrette and the Vietnamese noodle bowl.  Pair that with a springtime cocktail, The Drunken Sailor (Buffalo Trace Bourbon, Noval Black Port, Oolong Syrup, Lemon, Angostura Bitters), and you have the perfect warm-weather meal!

Who says you need a red checkered table cloth and fancy linens to enjoy a picnic? Steuben’s is bringing back their version of an ultra hip picnic: Picnics On The Patio! This year marks year 3 for the summer parties which are inspired by regional favorites from across the country.  Last years dinners sold out within days, and this year is sure to be the same…so you better book quick!   Seats are $60 per person (tax and gratuity not included.) There is a new Spring menu at Steuben’s with 15 new or reworked items. The changes are inspired by the season and also to “give his team the opportunity to be creative”, says Chef Brandon Biederman, who says most of the menu items were not his ideas, but came from his Sous Chefs. “I have a great team. They all work really hard, and allowing them to lead this menu change was a great way for them to really take ownership and try some new things.” says Biederman. Some of the new menu item standouts so far include; Grilled Salmon with lemon herb Israeli couscous and the Lox & Bagel Salad. Another not to miss item is the Hand Held Apple Pie, perfect for dessert on the go!

My taste buds are singing. Too Haute Cowgirls, known for their gourmet take on popcorn, is releasing a scrumptious new treat. And I am buzzed with energy after a taste test of the Haute Buttered Rum Brittle. Even better than the drink, this dessert is packed with with mammoth pecans, dark Jamaican Rum, brown suger and a hint of fresh ground nutmeg and Saigion Cinnamon. As with the all of the other confections made by Too Haute Cowgirls, this sweet treat is made in the high country of Carbondale in small handmade patches. The creamy and buttery brittle confection will be introduced at the Sweets and Snacks Expo in Chicago in May. I have a feeling gold is on the way.

Demand for plant-based cuisine is growing. Linger’s brunch offering recognizes this by making 6 of the 18 menu items vegan. The innovative restaurant incorporates local and organic fruits and veggies into recipes, in a creative way, hoping people leave chatting about the cuisine. “When is the last time you heard someone talk about mind-blowing carrots?” asks Culinary Director, Daniel Asher. “People just don’t talk about that. But people need to eat more vegetables. We make that happen with our take on food.”

Take the Breakfast Dosa, for example. Scrambled eggs, avocado and potatoes sit in a crepe made from rice batter and lentils. The savory crepe is vegan, gluten free and even has probiotics. Served on the side, you have the option of adding a curry, also made of lentils. All of a sudden, this meal is memorable, craveable and is heavy on veggies!

Another menu item to get jazzed about is the chili relleno. The sauce, simply made, is composed of tomato, celery, onion, garlic and arbol chilies. It’s refreshing to see every ingredient is not only healthy but recognizable. “Plant-based cuisine is a beautiful way to demonstrate quality of ingredients and excellence of technique,” says Asher.
